Griddle me This: Easy Sourdough Muffin Recipe.
Griddle Me This: No-Knead Sourdough English Muffins
Sourdough has been more than just bread-making for me—it has been a blessing and a calling. The process of tending to a starter, waiting for the dough to rise, and trusting in God’s perfect timing reminds me of how He works in our lives.
Just like we wait on sourdough to ferment, we are called to wait on the Lord:
“But they that wait upon the Lord shall renew their strength; they shall mount up with wings as eagles; they shall run, and not be weary; and they shall walk, and not faint.”
— Isaiah 40:31
Patience in sourdough, much like in faith, is not about rushing the process but trusting it. And when the time is right, the result is something beautiful—just like God’s plan for us.
Here’s a simple, no-knead sourdough English muffin recipe—perfect for slow mornings, deep conversations with the Lord, and of course, buttering up with a little extra grace.
RECIPE
📌 Ingredients:
• 120g active sourdough starter (½ cup)
• 150g all-purpose flour (1¼ cup)
• 120g room temp milk (½ cup)
• 10g honey or sugar (½ tbsp)
• 1.5g salt (¼ tsp)
• 2g baking soda (½ tsp)
• Cornmeal or semolina flour (for dusting)
• Avocado oil (or neutral oil) for cooking
📌 Instructions:
1. In a medium bowl, mix sourdough starter, flour, milk, and honey until just combined. Cover and let rest at room temperature for 8-12 hours (or overnight) until bubbly.
2. Lightly flour your surface and pour out the dough. Sprinkle salt and baking soda over it, then gently mix in.
3. Shape the dough into a rough ball, roll out ½ inch thick, and cut into 3-4 inch rounds.
4. Dust each muffin with cornmeal, cover with a towel, and let rest for 30-60 minutes.
5. Heat a cast-iron skillet or griddle over medium-low heat and grease with avocado oil.
6. Cook each muffin for 5-6 minutes per side until golden brown and cooked through. If they brown too quickly, lower the heat.
7. Transfer to a wire rack to cool slightly. Use a fork to split open—revealing all the nooks and crannies. Enjoy!
Final Thought:
Making sourdough is a slow, intentional process—just like walking with the Lord. We’re not meant to rush the journey but to embrace the daily nourishment He provides.
“Taste and see that the Lord is good; blessed is the one who takes refuge in Him.”
— Psalm 34:8
“Manna Didn’t Fall from Heaven… But Your Support Helps Keep This Mission Going!”
✨ Just like God provided manna in the wilderness, He often uses His people to sustain the work He’s called us to do. If this mission has blessed you, would you consider sowing into it? Your generosity helps us continue sharing truth, encouragement, and faith-filled resources with others.
